NO BAKE ENERGY BITES (V)

I'll be honest, this is the recipe straight from the back of Trader Joe's Flaxseed Meal. Don't fix what's not broken, right? These no bake bites are perfect on the go snacks, quick breakfasts or pre-workout fuel. They're super easy to eat, super easy to make and 100% vegan. I decided to add a bit of shredded coconut to my second batch!

Ingredients:
1 Cup Rolled Oats
1/2 Cup Dark Chocolate Chips
1/2 Cup Ground Flaxseed Meal
1/2 Cup Crunchy Peanut Butter
1/3 Cup Maple Syrup (I sometimes go a little lighter)
1 Teaspoon Vanilla Extract
(Optional: 1/3 Cup Shredded Coconut)

Mix all the ingredients in a bowl, roll into 1 inch balls and freeze for 25-30 minutes and enjoy!
