VEGAN PB PUMPKIN SPICED CHOCOLATE CHIP COOKIES

This is one of my favorite treats to bake all year long! Since they're made with all raw ingredients, they take little to no time to bake, so you can make them as chewy or crunchy as you want! (Less time in the oven for more chew) These "cookies" are pretty low-sugar and don't taste too sweet or rich, so they make the perfect on-the-go breakfast. 

Ingredients:
One box Trader Joe's Gluten Free Pumpkin Bread Mix
1 Cup Almond Flour
1/2 Cup Hemp Seeds
2 Tablespoons Flax Meal
6 Tablespoons  Water
1 Cup Applesauce
1/2 Cup Peanut Butter
Trader Joe's Golden Raisin Mix
Dark Chocolate Chunks


Instructions:
Mix flax and 3T water together, add 3more T, let sit 20 min, then add two pinches of baking powder
Mix all ingredients together, add more applesauce to bind ingredients together as needed
Roll into balls and bake 7-10 min at 350 
Option to top with Trader Joe's Pumpkin Butter or more Dark Chocolate Chips!
